Well, it is still in developement, it has very regular updates and new stuff being added all the time, plus there are tons of things on the steam workshop, it is mostly building atm, but if you find a decent server you can have factions and pvp etc. or pve.

As for exploration, there are a few different starting scenarios, but atm you are limited to exploring the asteroids i think.

But as a fan of star wars it should be right up your street, just youtube space engineers star wars
